GUATEMALA - Santa Clara y Anexos, Ricardo Zelaya

Santa Clara is located in the southern slopes of the Antigua Valley, between 5,100 and 6,000 feet, and privileged to have one of the finest volcanic soils for the production of specialty coffee. The preservation of its natural condition is a priority for the owners. The plantation is also under a very strict control of shade, allowing the coffee trees to receive the exact amount of sunshine required to produce this fine, exquisite and aromatic coffee.


The farm is managed by Ricardo Zelaya, who represents the fourth generation of coffee producers in Santa Clara. Señor Zelaya is a founding member of the Genuine Antigua Coffee Producers Association.


The hand picked fruit is processed and washed in a traditional mill with crystal clear water. It is then patiently sun dried for days in patios, giving each bean a distinctive blue-green color. This sun-dried coffee has the highest standards of quality in Antigua. Every step in the mill is monitored constantly to maintain the quality.

HONDURAS - Finca Bu, Pompilio Ramos Archila

Finca Bu is located in El Cielito, Santa Barbara, a region with a great temperature range of 12 to 21 degrees C, and rainfall of 1,200 to 2,400 mm/year. It is considered a zone for Special Coffees, and lies next to the National Park of Santa Barbara Mountain.


Pompilio Ramos Archila belongs to a group called Specialty Coffees Cielito Lindo, and is also a member of the Honduran Association of Coffee Growers. Pompilio began growing coffee in 1990, with a small lot, and now owns 5 hectares of coffee farm.

NICARAGUA - Las Flores, Gonzalo Adan Castillo Moreno

The farm "Las Flores" is located in the community Los Horcones, municipality of Pueblo Nuevo. Señor Moreno has farmed Las Flores for more than 25 years, following the standards used for certification as an Organic Producer. In addition to coffee, he operates 10 beehives, produces his own organic fertilizer for the coffee trees, keeps 20 dairy cows, and farms Tilapia in his three lakes.


Las Flores also supplies more than 100 surrounding families with drinkable water free of charge and works diligently to protect those water springs.


The farm is located approximately 1000 meters above sea level. The coffee is grown totally under shadow, using guavas, buckaroos, musace, guanacaste, wild figs, and other species typical to create the shade canopy.

EL SALVADOR - La Piñera, Luis Alonzo Araujo Padilla

La Piñera farm is located in the Cacahuatique mountain range in Ciudad Barrios, department of San Miguel. The region has abundant water, fertile land and dense forest in which animals including deer, tepezcuintles (sooty paca), and lion monkeys make their homes.


The region is ideal for raising coffee, which was introduced at Ciudad Barrios by General Gerardo Barrios, known as "The Father of Coffee" in El Salvador. The first coffee mill in El Salvador was built in Ciudad Barrios, existing to this day. The Araujo Guerra Family has been producing coffee for more than a century in El Salvador.


La Piñera is one of the originators of the Pacamaras varietal of coffee, and has given birth to many other Pacamara coffee farms. Due to this great achievement, Luis Alonso Araujo Padilla received a prize for Coffee Innovator Producer for Pacamara Variety in 1996. The family is very committed to social and environmental responsibility.
